Help me think about a vegan Lent- going to do this!

I'm an omnivore as are my family but I'd like to try and do something for the planet for Lent.
I generally plan meals but DH will cook more or less anything easy with a good recipe.
Everyone else can remain omnivorous and we'll have meat on Sundays (that's how Lent works).
Questions: I assume it's long enough that I need to take care of vitamins but I'll be OK for calcium? What should I be taking?

I'll probably have either porridge with vegan milk, or toast/spread/peanut butter for breakfast. I'm not a huge milk drinker but I may have cereal with plant milk if I can find one I like.
If DH is doing sausages or fish fingers or whatever I'll just get him to put in a vegan one for me.

So I need some ideas for:
3 kid pleaser meals per week - one of which can go in the oven on a timer and is VERY easy (DH takes them swimming on a Tues and we're late back)
2 or 3 adult meals that are v quick post work. 20-30 mins tops.

Nice vegan ready meals (DH and I sometimes go down that route but they can be curry etc).
The nicest vegan sausages/crispy bakes etc.
Nice vegan tinned soup.

A couple of kid friendly baking ideas.

Lunches beyond hummus and falafel! I can get some vegan sandwiches at work if I forget and usually I take leftovers or an easy sandwich (don't really want to cook separately!).

Also: DH doesn't like beans unless well concealed, nor lentils ditto. DCs are 3 and 6 and eat most things (so a beans on toast type meal is fine if it's me and them - often have that for our lunch). He'll eat chili with a lot of carne. DCs will happily eat dhal etc.

Not bad. Some nice meals (DH did a sausage stew tonight and I do like the Linda McCartney rosemary sausages) but not sure about dairy substitutes. All the milks (almond and oat so far) taste grainy and the Violife cheese melted fine but tasted of not much.
Started out struggling to get enough protein but I've gone over to the Burgen soya and linseed bread which has helped.
Also nice to find 3 types of Mcvities that are vegan!
I would love to find tempeh (I had it in Asia a few times and it was lush) but neither the Chinese supermarket nor the hippy shop have it.

Oh and soya yoghurt also tastes grainy.

I like the Koko milk substitute - inoffensive in tea and really good on cereal.

Ok update!
So far:
Soya milk is horrid (I knew this already)
So is soya yoghurt. All kinds I've tried so far.
Ditto cheese except the Violife creamy which is actually nicer than Philadelphia Light.
Soya custard is just about bearable.
Seitan is odd.
Rice pudding and porridge made with almond milk are ok
DH still doesn't like tofu but DD does (but she'll eat anything)
I don't like dried TVP (shame as DH does)
But some of the frozen mince things are OK.
Too many beans is bad for my stomach.
Everyone in the family likes Quorn (except the fishless fingers which are pointless).
Burgen soya and linseed bread is nice and high in protein.
There are way too many vegan sweets and biscuits available but oddly not very many crisps. Shame as I'm v fond of a cheesy crisp.
And nutritional yeast does make risotto taste nice.

The really cheap soya milk is not only bad for us but bad for the environment. Alpro is good, it's grown in Belgium not the USA or countries which have torn up rainforest for the crop. \

I love organic molasses, I put it in coffee or a chicory and ginger drink, you just put a half spoonful in with the just under boiling water. Oh also great in brownies, you melt it with the chocolate !

I think trying to find too many _replacements makes veganism hard It's better (IME) to shift to a naturally plant based diet gradually. So eg, have veg/pulse based dinners instead of mock meat. Humus on sandwiches instead of 'cheezes'. Replacements are never going to be the same as the original. Milk is the exception for me. I'm reducing dairy consumption at the moment and Oatly barista is fantastic in tea!

Yes thedevil and it makes it expensive. Especially the 'mock' sausage type things. ( I'm very fussy about added chemicals and palm oils etc. and they do seem to be full non - food additives).

Tonight I had a lovely mix of scrambled soft and firm tofu fried gently in olive oil with chopped onions, garlic, turmeric and tamari , it was delicious on a bed of cauliflower.
