City with good hotel for mother daughter getaway

Looking for a UK city and hotel suggestion to take my adult DD away. Happy to spend a bit but not extortionate prices.

Somewhere with cultural things to do, good shopping, easy train or car/parking from London area, spa perhaps, not too massive so we can walk everywhere.

I have done Bath and Winchester in the past.

Won't all the cities have a nice hotel and things to do? That's the point of cities, that they have hotels and stuff to do. Otherwise they wouldn't be cities.

York, Durham and Newcastle are all on the East Coast Trainline and are beautiful cities to visit.

Cheltenham. Oxford.

I'd do Cambridge it's so pretty.
