Please help a London amateur plan

Taking the kids to London for 1 night in July. They'll be 6 & 8. We don't know London and think we're over complicating things maybe! Help?!!!

Dh is taking 6yo to something at the London Excel Saturday pm. We're trying to find somewhere to stay that's easy to get to after as 6yo will be tired, and also works to access some sights the next day. And won't break the bank.

Also if anyone has any suggestions on what I could do with 8yoDd Saturday afternoon and then some sightseeing all together Sunday, they'd be appreciated! Can't include mannequins 😆

Not sure about hotels, sorry.
One option of something you could do for the afternoon with your dd would be to go to Stratford. It would take about 15 minutes. If she’s over 130cm, she could do the slide at Arcelor Mittal orbit. There’s also the massive Westfield shopping centre which has some fun places to grab a snack, shops like Smiggle, Flying Tiger and Claire’s and a cinema. Also in the Olympic park there are some swan pedalos which my dc enjoy.
Another option would be the Tower of London to see the Crown Jewels, which might be really interesting for her if she watches the coronation in May. The TofL is on the east side of central London so would be fairly straightforward to get to and there’s loads for kids to see and do there apart from the Crown Jewels.

The Natural History Museum in Kensington or the London Eye and/or The Aquarium on the South Bank. How about a hop on/ hop off bus tour so you see lots of the sights? Or take a boat trip down the river from Charing Cross or Westminster Piers. Most children like the Egyptian rooms at the British Museum for the mummies.

There is a Premier Inn at London Docklands, would that suit?

Greenwich is an easy journey from the ExCel and the Docklands. The Maritime Museum has lots of hands on stuff for kids, there's a brilliant playground in the park with sand and water, the Cutty Sark is impressive even from the outside, and there's interesting food options at the market. You can also get the boat down along the river to central London if you want to see Tower Bridge, Tower of London, Big Ben etc.
