Just (perhaps optimistically) booked a couple of nights in the Cotswolds with DP staying in Moreton in Marsh.

We’ve never been before and will only have 2.5 days there. What must we do? And where to eat? I’ve heard places are very popular to keen to book everything we can

Burford's nice and about 14 miles from Moreton.
Never got the hang of Stow on the Wold though, other than Scotts of Stow, never found anything else of interest!

Bradford Arboretum is nearby and you're just half an hour away from Blenheim Palace. It's about 15 minutes drive to The Slaughters Country Inn which does very good food and the village is pretty to look at too. You're also about 30 mins from Bibury which has a trout farm (feeding the trout is very, very relaxing) and also the much photographed Arlington Row, which is a row of 17th Century weavers cottages. Bourbon on the Water is 13 minutes away and is very pretty with a good selection of tea rooms.

If weather is good, Broadway Tower is nice & near your digs.
Have to book, but suspect Chedworth Roman Villa is good (watch road quality near there, though).
Snowshill gets a lot of tourists although I'm not sure why.
Cute pubs in most villages, anyway.

Bibury is like a hobbit village, was very busy when I was there.

Stay away from Bibury it’s not that exciting and you can hardly move for tourists.

I prefer Stroud valleys, Cheltenham, Cirencester to north Cotswolds.

It's Batsford Arboretum. Fabulous at this time of year. There's a birds of prey place opposite.

You'll be very close to Stow-on-the-Wold, Bourton-on-the-Water and Lower Slaughter. Lower Slaughter is a lovely old village with stream running through, tearoom serving nice cakes and shop by mill - if you only visit for 30 mins, it's worth seeing something of it. I used to love Stow, but these days would choose Bourton as there's more in the way of shops, tearooms, a large stream running through the centre which you can sit by, model railway and small maze. Cheltenham is nice for the regency buildings (more so in Montpellier), and maybe shopping and lunch - if you're looking for coffee/lunch there's a couple of nice coffee shops/tearooms in Regent Street, The Find and Coffee Dispensary (you can prebook the first one). Can't recommend any restaurants/pubs but I'd prebook as they'll be less tables due to covid and some Cotswold eateries are small. I know it's a chain, but in the Greene King are absolutely brilliant regarding covid restrictions and you'll feel safe and relaxed.
