Cornwall. Anytime but I think best to go may half term and autumn half term, and the first half of July if you're lucky enough to be off before the rest of the schools. There's nowhere better in the world when the sun is out, but loads to do for kids in the rain as well.

I would look for stuff the kids want to do then find a place offering it, most things are offered in many places.

I think it depends on the time of year, but for a year round break, my children love the Lake District. For summer/autumn, then Northumberland can't be beaten: Cragside, Wallington Hall, Alnwick Castle, the stunning coastline etc

Love the East Yorkshire coast. My favourite is Filey (many a childhood summer holiday spent there) but ds7 is keen to go back to Robin Hood's Bay which was also really lovely and had much better pubs and eating places. We stayed in a lovely cottage in Robin Hood's Bay 2 yrs ago. We will go back. Booked an air bnb in Filey in July... not sure we'll get there this yr.

My "go to" is the Isle of Wight. Downside is the frankly astronomical price of the car ferry.

New Forest. So pretty down there, and so many things for the kids to do nearby like Marwell zoo, Monkey world and Paultons park.

Isle of Wight is totally geared up for younger children - under 12s. Very family friendly.
Blackpool is also worth a mention. Loads of people say it’s a dive and I think the backstreets probably are but actually the seafront is very nice, and there is loads to do. Not sure about a week but certainly a long weekend. The Big Blue Hotel is fantastic and our room was practically within touching distance of the Pleasure Beach rides.
