Single mummy to 3 kids (9,7&2)...am looking to take them away somewhere in the UK during the summer but I'm struggling to know where to even start...I don't have the biggest budget and am struggling to focus on what to search for

Where abouts in the U.K. are you?
Do you want a beach? Farm stay? Glamping? Mobile home? Holiday park? Do your oldest two want organised activities to do?

start with your budget and go from there because that will determine whether you have a cottage or camping. what is your max budget for accommodation? do you have a car?

the easiest and cheapest is going to be camping near to home.

Agree you need to decide what you all want out of the holiday. Tbh kids usually like whatever is offered so I'd be putting your needs top of agenda.
If you need a mix of rest plus family time then I'd suggest a caravan park.. Hoeseasons or butlins... They usually have pools and slides and playground etc plus organised kids clubs for older two. You might find somewhere that has a nursery type club if you need a bit of time for yourself.
Then seaside or countryside?
Personally I'd always go for seaside and as most of Britain's seaside is in gorgeous counties yiy can get lovely countryside too.
If you want a cottage I'd suggest one in a group, kids like playing with other kids and again they may have other things like pools etc.
Look for indoor pool... If it raining they are good for entertainment

What are:

your budget?
You and your children's interests, things they find fun? There is no point recommending a working farm if you have a child who is scared of animals.
Your transport, if you have a car or can hire one you will have more flexibility.
Where you are setting off from.

As jellybean said holiday parks can be good, Haven have kids clubs, activities and evening entertainment, you could stay a week and not leave the park.
