Wedding anniversary night away ideas

My husband and I will be celebrating our third wedding anniversary this April. And we'd like to do something to celebrate.
Our first anniversary was a complete disaster due to family issues. Our second was really good. We went to see a show we both love and stayed in a 5 star hotel.
This year we'd like a night away somewhere. It needs to be easily accessible by train as neither of us drive. I was thinking not too far from where we live (Liverpool) as we have a 2 year old ds who will be with dh's parents (they love having him, we aren't taking advantage at all). But if it's worth it further afield may be considered.
We want a nice hotel, not overly expensive, and would like a nice meal and drinks after (though I'm the worlds fussiest eater so need to take that into consideration).
Any recommendations? (I know there are some nice hotels here, but we wanted to be away from home for the night).

How about Manchester city centre? Easy by train and you can get home quickly if your ds needs you.

Chester? Oddfellows is quirky and they do great stay and dine packages in the winter (look at their special offers page). Could see what's on at the new theatre/ cinema in chester the day you are staying?

Sorry I've only just seen these replies (thank you all Smile).
We don't really want Manchester again as we went there last year.
But will certainly have a look at the other suggestions with dh. Especially as both York and Chester are such beautiful places (I think).
