Leaving teaching without new contract

It’s coming up to the time where I need to hand my notice in to my current school if I’m to start a new job in September. I have a new job lined up (outside of teaching) but the contract won’t be prepared before the deadline day for handing my notice in.

I don’t want to hand my notice in without having a new contract (for obvious reasons) but another issue I have is that I genuinely enjoy the school I work at. I don’t need to get out, it’s just a better paid job has been offered and one I believe will align more with my future plans and work life balance.

If the new organization ended up not offering me the contract in the end, for whatever reason, I’d be really upset that I’d given up what I perceive to be a good job.

The OH is encouraging me to take the risk, it’s a step in the right direction career wise and probably not an opportunity I’d get again. They also won’t wait as they need someone who will start in September (this isn’t up for negotiation).

If it’s helpful for advice- I can financially survive if I needed to go on supply for a while before finding a new job but understandably I don’t want to do that- especially since I like current job.

Should I take back my acceptance of the new job and just accept that I can’t leave without signing a contract, or go and take the risk? The reason they can’t have the contract ready is because they have a couple of staff reducing hours and they need to organize timetables, which is when they can confirm hours with myself (again which suggests they could back out of the job offer).
