New Head has volunteered me to oversee/run club in lunch hour when I am already run off my feet with break duty, covid timetabling. Best way to approach...ideas please...

Otherwise a polite “great idea, I will keep that in mind for gained time / next year when I have a bit less on my plate”.

Lunch time is not directed time. If you're on the leadership team, it's a different matter

No I am not SLT....H can say she didn't volunteer me she just sent two children to ask me if I would. Cornered....I could have said no I suppose but I am newish and feeling the expectation I said yes....

I always tell my ECTs to say no

If it's primary then pick something they can do without much (if any) input from you: Lego club,Pokémon club, jigsaw puzzles, board games etc then you can get on with marking in the corner of the room

''Tis an art club I am going down the child-led learning route 😉 I have agreed now .I have said I'll do six weeks and then someone-else can take over....which is unlikely as every-one is too busy. I am not new to teaching been at it 20+ years you would think I'd know better......
