Getting an NQT position 3 years after PGCE and undertaking supply.

Sorry for the long post.
I completed my PGCE in 2018 in PE. Since then I have been undertaking supply teaching (now in 3rd year of supply), mainly day-to-day.
In my first year on supply, I got a week of supply teaching at a state grammar in Jan 2019, which kept being extended every 2 weeks, until the end of the academic year (so didn't count towards my NQT ).

Last academic year I mainly got day-to-day supply (in my subject or others) and the odd 1 week or 2 week long supply in my subject. I was meant to have a term supply from the Easter, but the pandemic hit and it got cancelled. I did apply for NQT jobs in other areas of the country (I live in NW) and got offered interviews, but turned them down as I didn't want to move to the South.

This academic year, in September my Mum had a stroke, lost use of her left arm and became unstable on her feet and I am the only family she has (still live at home). So, helping her etc. has taken priority, over getting a job, whilst she has been recovering. I have been undertaking day-to-day supply since September again and got 2 weeks supply before Christmas at a local school, this was meant to continue after Christmas until Easter, (was relying on it for an up to date reference) but again it got cancelled when we went back into lockdown.

I am desperate to get my NQT done, and get a job for April, June or September either in the UK or abroad (although I need a new Passport). However, with being on only day-to-day and short term supply I am now having issues due to no up to date references, as I am still using my PGCE tutor, which looks bad on an application.

Looking for advice of what I can do or what others have done in this situation.
