My friend, who is a HT, has asked me if I can do some casual supply work in his school as needed. He thinks it will be approx one day per week.
As there won't be an agency involved, I will submit an invoice and be paid directly by the school.
Does anyone know how tax works? How about PAYE? Will the school sort this or do I have to get in touch with HMRC? Any knowledge/ experience greatly appreciated!

I think you need to ask the school really. Are they not willing to put you on their payroll? I've never had to submit an invoice!

The school shouldn't really do this (an IR35 check would almost certainly tell them they ought to put you on payroll). I think that's more their problem than yours though. For your tax, you'd just declare it as self employed income on a tax return, I think. Worth talking to HMRC though; if it's not much money or a one off, they might tell you that you don't need to do a return.
