Habit peeing!

I'm sure this is a well covered topic of cats peeing where they shouldn't be!

I previously posted about my cat, she has very recently been diagnosed with Hyperthyroidism and is now on medication for this, she is doing alot better but with all the upset and stress she started peeing on my front door mat inside the house. We had her tested and she had Struvite stones, she has been on special diet for 4 weeks now and these we believe these have cleared. She now uses the litter tray and does not hold for days at a time but she is still peeing by the front door which I believe has become a habit.

We have 2 litter boxes in the house, both are cleaned out daily of any mess. One in bathroom and other tucked away in main bedroom. I cannot put one downstairs as the dog is disgusting likes to eat the "treats" out of the box.
I have removed the matting and have cleaned the area many times with special urine destroyer cleaner, used lemon scents anti bac as believed cats don't like lemon scents, we have put down tin foil and she pees on top of it. I had put down puppy pads for a few days to stop the peeing soaking in to the concrete floor. We have now put a temporary rubber mat down to aid clear up. Please help me to stop her. We go away in 3 weeks and have a pet sitter coming for her and really need her to stop.
She only seems to go in the middle of the night. She uses the litter trays through the day and I have been putting her in her tray before I go to be and she goes but every morning we wake up to an accident.

Any tips or tricks to get her out of this habit. We have tackled all the medical issues and she is in much better health, this is why i believe it to be a habit now.

Can you lock her out of the hall?
Or put the litter tray near the front door overnight and lock the dog away?
Or get a self cleaning litter tray to remove the “treats” from the dog?

You have my sympathies, it’s really hard to train them out of a habit they have developed as a result of something else.

@AvoidingPandaEyes Thank you for the tips, locking her out is not possible, the front door and hall run straight up to the stairs and landing with no doors! I did put one of the trays downstairs overnight for a few nights as the dog gets put in kitchen at night but the cat pee'd next to the tray!
I even barricaded the area with boxes, pushchairs etc and she was adamant and got through to pee. You'd think she wouldn't bother with all the hassle and just go in the box at the top of the stairs!
