Cat chewing our hair

He comes up and chews on my hair DC's hair and has started the same with guests he feels comfortable to come out around. Why do cats do this?

He's quite loving and likes to be with us and the kids on the sofa but I've noticed he follows me everywhere in the last few weeks for a fuss/company if I leave the room, even if he's been sleeping. He won't necessarily cry but just suddenly will not be left alone which is a big behaviour change. He'll be 3 this year.

It's really important that you stop the hair chewing as it can cause dangerous blockages and other gut problems.

Unless he seems distressed, and assuming he's fine if you go out, I wouldn't worry about the following around.

Yes this was my thought about the hair too. He gets really close and then starts chewing so I can usually see him when he's about to do it.

I wondered if they have a cause for doing it, like Pica.

Bloody cats… but also, seriously, what are you feeding him? Dry/wet/combo? Indoor or outdoor cat? Any cat grass available?

He's fed wet food only. Felix pouches - the one with meat/fish pieces in gravy. Not the best but he's a very fussy cat. We've tried to give him actual plain oven cooked fish and he's turned his nose up before. Half of the time he'll steal a bread stick our toddler has forgotten somewhere.

He was an outdoor cat but is currently spending a lot of time inside. Partially weather related and partially due to cats coming on to his territory. DH tends to pick him up and put him in the garden for a bit once the others are in for the night. The reason he does this is due to the fact the cat would hold his wee until he went out at one point.

A change in behaviour could be stress related and the last part of this post might be the cause. If he's staying in more and to the point he's holding his wee because of other cats then it's definitely causing him some angst.
I'm assuming he's been neutered otherwise he'd be outside taking on all the visiting cats.
What you do about it I don't know but I'd have a chat with the local vet/vet nurse to check it's not a sign of a deficiency of some sort.
Cats will seek out to eat what they need so it's worth checking.
You could also try giving him access to a good quality cat biscuit and access to water inside if you do that.

I would be looking to change his diet and giving him access to a litter tray 24/7.

It could be stress/boredom related, which would fit with him being indoors more than he wants to be. Can you get him some cat grass and maybe a food puzzle to distract him from your delicious hair?
