Tray with doors and food

Two separate questions:
I have two kittens and two trays on separate floors. They have doors but when shut the kittens don't go in and have pooped near to the tray, even though we put them in there and helped them figure out they have to push the door open, so now we are leaving the door open but that's not what we want to do - is it just trying over and over and bearing with the 'accidents'? Or are the kittens too small still (trays are fairly substantial size). Poop is ok but I don't want cat pee on the carpet! I have little sense of smell so I'm paranoid about it. They are four months and need another lot of vaccinations before going outside, and hope they do most of their business out there eventually.
Second: the kittens are Maine coons and we feed them the recommended amount according to manufacturers and the breeder, but the cats are always hungry. We leave dry food out but they gobble that up too. They are pretty skinny but in the past cats I've had just throw up a big meal. At the moment they are fed wet food twice a day with kibble available- should I do three wet meals? I'm worried about feeding too much at once and them just regurgitating it, but also don't want them to set their internal clocks to expect three meals when I've only always fed cats in the past two, though I guess there's no reason not to, except the smell (cat food is pungent enough even I can smell it)!
I feel like a new mother fretting over stages that are fairly insignificant but we have had to ban them from the room when we are eating as they are so annoying at our meal times!

Take the door off the trays
Feed several small wet food meals and leave dry out. I've never measured food out
They need spayed/neutered and chipped before going out.

Lots of cats don't like being shut in theyr toilet as @dementedpixie says take the doors off.
Kittens you can't over feed. It is only once they over a year old you need to start to be cautious over the amount of food they eat, too much kibble is usually the cause of obesity. An adult cat needs a surprisingly small amount.

OK thanks. I've had numerous cats but usually as adults. None were overweight. The kittens I've had did enjoy their food but I've never had this amount of, for lack of a better word, greed! I feed them at 7am and two hours later they are looking for more sp I'll make sure they have dry. One got in to a packet of stones and scoffed one the other day!
