Urgent - panicking about Cat hiding while we're away

Aaargh I'm stressing about one of our two cats. We are away on holiday and as we always do arranged for our neighbour to come in to feed our two indoor cats.

For background, Both are very nervous rescues who came together and seem very comfortable in each others company - in each others arms every day etc but one has obviously never been socialised so while she's quite relaxed so long as she is a few feet away from us and she will come and yell at us for food and sniff a hand extended to her she really doesn't like being stroked. She also has a deformed tongue so can't groom one patch of her back so has to go to the vet twice a year or so for dematting.
Last Friday she went to the vet for dematting and we discovered that although she's been in twice a year for health checks etc and we thought she'd had annual boosters, there was no record of her having them since 2016. We therefore arranged for her to restart the vaccination process. She came home and apart from being half bald and a bit skittish she seemed normal. On Sunday night we started packing to go away on holiday on Monday morning. On Monday morning she didn't come out for breakfast so I checked and she was hiding on the pullout bed under the spare bed. She quite often goes there so I didn't think anything of it really. We came away but neighbour said she didn't come out when she was there yesterday evening and she would report back Tuesday morning.
Now I'm panicking in case she picked up something at the vet and is ill, rather than just extra stressed by the vet visit and our packing coming so close together. Other cat is a gannet so quite capable of eating two cats worth of food every day. Hopefully she will come out when neighbour arrives today, but if not how long do I leave it before asking nice neighbour to potentially cause more stress by moving her out from under to make sure she is not ill? Or do I just ask her to check if she has changed position?

Could your neighbour shut the two cats apart for a couple of hours, each with their own food/litter trays, to see whether the hidden cat is coming out to eat?

We have a similar problem with one of our cats, for some reason he hates my dad and will hide when he comes to feed the cats if we're away. The older cat goes outside so my dad will feed her first, let her out, then pop food in the little ones bowl so he can check later that he's eaten iyswim.

Thanks Ellie. Yes I was wondering if something like that would be possible without stressing them both out even more. I've never had unrelated cats who love each other like these two do
