What am I supposed to look for in a dried cat food? Recommendations needed!

We picked up our new rescue cat last week. He is six years old, the rescue told us he wasn't fussy and had been used to eating a mix of wet and dried food there.

He was a bit off his food for the first couple of days, seems to be showing more interest now. We went to the local pet shop and picked up lots of different sachets of wet food, but there wasn't really the option of buying tiny trial packs of dried food.
So we got a small bag of one called Perfect fit, and he doesn't like it. He acts all hungry and then is a bit meh when he sniffs the dried stuff, though he has eaten a few bites.
By contrast, he is wolfing down the wet food (he seems to favour a relatively expensive one called Country Hunter).

I am keen to continue giving dried food, but I don't want to risk buying lots of big bags that aren't appreciated.
I haven't had a cat for over a decade. I used to feed the previous cat mainly Iams, with the occasional bag of a different brand, which I can't remember the name of now. There seem to be loads of new brands available now.

What should I be looking for in the ingredients list? I feel a bit blindsided by it all. I want to get something healthy. I know it needs taurine, and lots of meat in it, but apart from that I am a bit stumped.

Are there certain brands that are healthy and that cats also seem to find delicious?

I want to support the local pet store if I can - they seemed to have a reasonably wide selection, though I can't remember them all now. I don't really want to order online generally - but I would like to order some trial-sized packs and see what he gets on with. Any good websites where I could do that?

Sorry that was a bit of an essay Grin. I just want him to settle in and enjoy some nice tasty food...

Zooplus and bitiba are good for both wet and dry food, litter, etc. I am moving my cats onto thrive dry just now which is 90% meat

You basically want lots of meat and no cereals

Thanks, I found one called Encore in the supermarket which has no cereals, so we will give that a try.
DH came home with some Royal Canin fussy cat food, which seems to be going down well. So plan is to feed that and first while he settles in and then gradually switch over to the Encore one...
And if that doesn't work, go back to the drawing board Hmm.
