how to persuade cat to poo in the litter tray

We got our kitten about 3 weeks ago. We were told by his previous owner that he was litter trained, but he either wasn't or just won't use ours. He mostly wees in the tray though not always, so we don't think he has an issue with not liking the tray. He tends to poo next to the tray but also poos in other areas of the kitchen. DH and I are despairing. We are fed up of cleaning up stinky cat poo, especially the diarrhoea since he was diagnosed with cat flu last week, we can't let DD (aged 14months) play in the kitchen or the back room just in case there is cat poo remnants around, and it is hard keeping both cats shut in the back of the house where there are hard floors rather than carpet. He also can't/ won't clean himself properly after pooing so has poo stuck on his bottom, then will sit on the furniture and even on the other cat getting poo everywhere.
We have tried:-
Getting another litter tray in case he didn't want to share with the other cat
Putting him in the tray at every opportunity and rewarding him with dry food for staying in there, but he will then jump straight out and still poo on the floor
Putting tin foil on the floor where he poos, DH read this suggestion on the internet as apparently cats are scared of tin foil and won't stand on it, but our cat just pooed on the tin foil and in places where we hadn't put it and we can't cover the whole house in foil.

DH says we will have to get rid of the cat if he can't learn to use the tray soon, which is a shame as he is a lovely kitten apart from this.

Any suggestions?

what litter are you using because cats dont necessarily hide thier wee but do dig to hide poos and he might not like scratching/digging the litter you have you could try a different litter and if he has cat flu he wont have a lot of control over when he poos, and if hes not feeling well wont be inclined to clean himself either just get some damp tissue and wipe his rear like a baby when hes pooed saves him walking it round the house

We are currently using catsan, but have tried at least 4 different kinds. We can't really try them all until we find one he likes (if we do, he will probably like one that the other cat doesn't llike). We do clean him when we notice he has pooed, but we are often out in the day so don't always know.
