Dog Sitting- a few questions

I am looking after my bosses dog (3 year old Labrador cross- not sure what with- red coloured) until the middle of next week whilst she is away. I've never had a pet before so don't have any experience of animals (and feel very nervous about getting things wrong!) and have a few questions (things I forgot to ask before my boss went away!).

This may sound odd but other than if she waits at the door are there any other signs that she may need to go and do her business? I've had her since this morning and have been regularly taking her outside for little walks.
How often can you give treats without becoming too much? I've given her one every hour or so today as she's been well behaved but not sure if this is too much
I've got her at work with me (office with 4 of us in) during the day- today she lay on the carpet next to me and I held her lead in one hand loosely- is this ok or will she be tense with me holding her lead all the time? I've only been holding the lead as she jumps up and barks and runs if someone comes to the door
I gave her a bit of banana earlier- I googled and this seems to be ok but just wanted to check with people who have dogs? Not sure if the sugar is bad for a dog

Loose lead in the office is fine. Our lab is actually more likely to relax on the lead as she knows she can't go off investigating.

Treats depends on the size of the dog and the size of the treats. We have some which say only give 2 a day for a 25kg dog and others that say 40-50 a day.

A bit of banana is fine for dogs.

Circling and sniffing the floor are other signs, but if she's properly house-trained, she should just go and wait at the door - if you can't see her, she might whine or bark to get your attention, or paw at the door handle.

Depends on the dog, how much exercise they get and their overall diet, really. My dog gets small meals as he gets quite a few treats on walks etc, for example.

A loose lead in the office is fine, though it may be easier to tie her to a table or something?

Banana is fine for dogs, just don't give her loads or she might get the runs.

Ah welcome to the dog-world!
I just wanted to mention that grapes and raisins are very toxic to dogs. I know you didn't ask about this, but it's not that commonly known if you don't have dogs.

@LBF2020 Thank you! Luckily I googled things that are toxic to dogs before I picked her up! I knew chocolate was toxic but I wouldn't have known about grapes and raisins!
