Dog not toilet trained over night

Hi All, I need some advice. My dog is 1 year 4 months and I don't think we have properly cracked toilet training.
He asks to go outside during the day but overnight, he will sneak off and wee/poo in the house probably 4/5 nights out of 7.
I always take him out last thing at night at around 11 and we are up at around 6.30.

Does anyone have any advice?
Should I be lifting his water after a certain time?
What I will say is that he is a grazer. He tends to have a bowl of biscuits that he will go back to.
Also; he is neutered and this isn't a new thing.

Don’t let him out your sight in the evenings, keep him on a house line lead if you need to.
Over the next few days take him out every half an hour and praise for going

Stop the grazing - set meal times and that's it. Water should be down at all times though.

Grazing causes a real problem with toilet training - if you don't know when they're eating, you don't know when they're going to need a poo.

Set meal times (I would go for twice a day at that age) and if he doesn't eat, remove the food and he gets nothing until the next meal time. He should learn that if he doesn't eat when his food goes down, then he doesn't eat at all. His last meal should be a good 4-5 hours before bed so that he has a chance to poo before bedtime.

Then I would take him out at least every couple of hours during the day and last thing at night. Tons and tons of praise and a high value treat when he does it right.

Crate them overnight. It changed my life as my puppy was doing the same as above.

I used to have her overnight in the crate until she was about 6 months.

She then seemed more mature and so I just let her sleep where ever she wanted. I had the same that she started toileting in the house at night.

Crated her at night again for approx 4-6 weeks, I tried again to let her sleep out at night and she has had no more accidents.

She has grown up and understand more now.

Perhaps give it a go?

I feed once a day in morning so its easier to manage toileting. Crate also here.

I would stop the grazing. Third of his daily ration when you get up, the rest twelve hours later, no less than three hours before bed. If he doesn't finish, take the bowl away till the next mealtime. At his age he has the bowel capacity to hold on, unlike baby puppies. I would crate him at night.
