Working-line ESS - advice please!

So, have been looking for a spaniel. Long story short, I have the opportunity of a pup from a long working line. I would want to train and bring them up well, but in the home as a family dog first and foremost. I am researching the general thoughts and requirements and it’s a mixed bag as to the level of intensity and family-friendliness.
I would really appreciate any good knowledgeable advice. Preferably first-hand from owners and perhaps any trainers/gundog trainers. It may be a bit too far of a leap? I can offer long morning rambles with enrichment/retrieving/whistle training, and we have a half acre garden with interesting scents, for exploring, games, training. I don’t want it to be my life’s work, however.

I don't think the lack of further testing is unusual in working lines? The grandfathers have had many litters- no issues are flagged
I think it’s true to say that there often isn’t a great deal of health testing going on in a lot of working lines, but tbh, I haven’t seen many show breeders utilise all that many tests either!

The ridiculous price increase and lockdown restrictions have rather put an end to it, but we had been thinking about another dog (different breed) and I couldn’t find a single breeder, many of them KC Accredited Hmm who were doing anywhere near the health tests available for their breed.
They all seem to be doing the absolute bare minimum required to get the accreditation.

Sad, if I was breeding I would use every test available for that specific breed.

Just goes to show, imo anyway, that regardless of how many (or little) litters, waiting lists, titles etc, really, the main motivation is money.
Why else wouldn’t utilise all that is available to better the health of your dogs/breed..?
