Definitely worth reading their starter guides on how to switch to raw. These all recommend starting with a single protein (usually chicken or turkey) then gradually introducing different proteins until you have at least 5 different types. I think this approach would be particularly useful when dealing with an itchy dog - if your dog's itching is due to an intolerance to a particular protein hopefully you will be able to spot when the itching starts so you know which new protein is abusing it and you can eliminate it accordingly.
It's probably worth asking advice from one of the groups on whether you should introduce bone straight away. Typically for a pup it is not a problem but for an older dog it is recommended to start off boneless to allow stomach acid to adjust. I've seen a fair few of your posts but I'm afraid I can't remember how old Wolfe pup is nor am I exactly sure when the cutoff point is so I suggest asking advice from one of the groups (my personal fav is Rawfeeding Rebels ... very friendly and helpful).
Now, with regards to completes vs diy. I personally mix and match. I started off using completes because I found diy confusing but eventually started doing some diy. I wanted to introduce more Raw meaty bones (so that my girl could get the dental and stimulation benefits from chewing) but since she's only 8kg it meant I needed to balance out the high bone content in, for example, a duck neck with a couple of bone free meals. As I said, it was bit confusing to start with but I think there is an app that you can download that will help you work out the 80/10/10 to create balanced meals.
I haven't used Wolf Tucker so can't comment on that but can recommend Paleo Ridge, The Dogs Butcher, Nurture Them Naturally and Natural Dogs Direct. Alternatively, have you looked to see if you have a local retailer that supplies various different brands that you could try out. Lots of companies also deliver (and some nationwide). Plenty of folks on the fb groups seem to use Scruffles.

Finally, with a switch to raw for a giant breed you may want to think about investing in a dedicated dog food freezer ... saves on delivery costs in the long run!
