We have large breed dogs and wondered if human cod liver oil and glucosamine and also multi vitamin and iron would be ok maybe every other day?

I wouldn't without showing the bottle to a qualified vet to check whether any of the ingredients are a problem for dogs. There are all sorts of things that go into vitamin pills other than the active ingredient - any of which could turn out to be harmful to dogs although harmless to humans. If the dosage isn't right that will also be a problem, some vitamins can cause damage if you take too much and taking a larger dose less frequently is not a good solution to this.

Cod liver oil is okay. Human glucosamine is not bio avaliable to dogs so they don't absorb it. Humans need glucosamine sulphate and dogs need glucosamine hydrochloride.
Dogs do not need vitamins and iron and I would never advise giving these if they are on a balanced diet. There are conditions than can be caused be having too much of certain vitamins.

There are quite a range of symptoms and conditions that can be caused by overdose of vitamins and some are irreversible. A few examples would be low body calcium causing seziures and or the reverse excess calcium causing fusion of the spine, though these are actually caused by incorrect magnesium and vitamin D levels.
