Dog Poo Panic - How to handle?

This sounds daft but I have a lovely dog, who is so gentle and well behaved and mostly obedient..

..but, when he poos he instantly tries everything he can to get away from it. As I'm bending down to pick it up he is pulling so hard in any direction. I don't want to scold him in any way then as I think it might make it worse. We know he was neglected and I worry he might have been punished for going to the toilet when he was desperate (this is also because of how upset he got over a wee tummy bug). I'm trying to get him to "sit" or "wait" while I scoop but he just isn't himself and ducks his head as if I'm going to hit him (which I've never done). I try to say good boy and reward him when the situation is done with and he is being calm again but it isn't working. This has been made more urgent recently as I have arthritis and my balance is a bit off - it is only a matter of time before I end up in said poop!

Any tips will be greatly appreciated, I don't really like the "pack mentality" type of training, especially as most of our work with him has been confidence building, not trying to put him in any sort of place. TIA!

When he has finished his poo take two or three steps away from the poo saying nothing and not acknowledging the poo (not that I think you talk to the poo you know what I mean!) and then turn in a circle by this time he should be calm and you are still in the correct position to pick up the poo.
