Well, we never actually saw Amit leave. We just got Jai's version that he left. Jai told Eric he was taking Amit to the hospital after pushing him down the stairs. Jai has form for psychopathic behaviour so he could have done something more sinister and the fact that Eric blackmailed him into sacking Victoria could indicate he has something to hide that he doesn't want anyone looking into. If Eric told Suni that Jai forced Amit to leave then Suni tried looking for him back in India and he wasn't there...
