Quick, simple recipes for 18 year old to cook

Hi. I have to leave my 18 year old DS at home alone for the weekend every 2-3 weeks to go a look after my elderly mother. He tends to eat total crap while I'm away i.e. takeaways (fried chicken etc - his favourite food to be honest). I'd love to know of some super easy, and quick recipes that he could make and that are suitable for one person (or will last for a couple of meals). He has ADHD and won't do anything that's too much of a faff. I'd really love him to learn to cook a few things (he generally hates the sort of stuff I cook - stews, curries etc). Any ideas gratefully received.

Scrambled egg and toast, or any of the other 'stuff on toast' alternatives

Most of my quick go-tos are stews & curries as well. Does he like pasta?

A bag of stir fry veg, a sauce, some cooked chicken or prawns and microwave rice or quick cook noodles. The supermarkets often have a deal on for veg, sauce and noodles. Healthy and quick!

My 12 year old is enjoying cooking instant ramen but then adding more toppings like spring onions, shredded carrots, a handful of spinach, a soft boiled egg, sesame seeds and sesame oil.

Others that my DC make are tortellini with pesto, nachos with refried beans with chopped peppers and sweetcorn on top, or sandwiches! Tomato and cheese toastie with some tomato soup is the best I think but they seem to love their tuna sandwiches.

I'm sure he could manage to cook something if he wanted to. Whenever my 17 year old has to fend for himself he gets takeaway even though there is stuff in the fridge ai know he can cook. Its just what teenagers do.

I order hello fresh meals for my adhd/asd adult son- he loves them and he has learnt a lot from using them ( esp if I turn a blind eye to the mess in the kitchen!)

The mess my teen ADHD son would create with this sausage and mash would be insane

not a chance he would bother i’m afraid

If cooking totally independently teens mostly make:

Fancy ramen (basically supermarket super noodles but pimped with crunchy veg/protein)

Risotto (they were taught this early as a cheap, one pot dinner)

Pasta (pesto / carbonara / baked veg)

Baked potato with tuna / cheese.

Pizza. Made from the ready made bases that you just add tomato purée and cheese to. In the oven and bobs your uncle. You can use bread instead and make pizza (sandwiches) but it's not as nice.

Corned beef hash? Make up a half bag of smash potatoes in a large oven proof bowl. Add sliced cornedbeef, mash ingredients together. Sprinkle grated cheese. Put under grill until bubbling. Service with baked beans heated in a mug in the micro.

Don't know if these meals are nutritious. And he'd have to remember to use oven gloves. I lived on cheap food as a teen in a flat and survived but prob not the best nutrition.

As well as the total obvious: oven pizza, oven dinners like chicken kiev and chips

How about one of those whole chickens that you roast in the bag. He could have it with different things, it will last a few meals. Eg salad, chips and veg, sandwiches.

This is one of the recipes I sent DD off to uni with (although we just slice up any sausages rather than squeezing the filling out as that's revolting 😂) you can use sweetcorn or peas if broccoli isn't going to work!

This is ds (aged 15) favourite thing to cook/eat at the moment usually has it with garlic bread.
The good food website has some simple recipes.

Oven fajitas - slice onion and pepper, mix with a bit of oil and fajitas spices then roast for 10 minutes or so. Add sliced chicken or minute steak then back in the oven until the meat is cooked. Serve in wrap.

I am/was. They can manage more than beans on toast and heating up soup (in theory. In reality none of them would have touched soup unless their life depended on it).

The older two turned into decent cooks whilst at university.

I was thinking this too. Would people speak to people like this in real life. No probably not. Not got the balls too. Hide behind their phone. Nothing wrong with what the OP is asking. Noticed it on lots of threads.
