Layers cut in wrong direction?

A question for the hairdressers please!
I usually have my hair cut by a junior stylist at the big well known high street chain of hairdressers but had become a bit dissatisfied by the very rushed service of late.

This weekend I tried my local salon and had my fine, mid length straight hair cut by the salon owner. As she started, she asked who cut my hair last as the long layers had been cut in the wrong direction!

Is that actually possible without looking terrible (it didn't)? She's now cut layers in a bit shorter than I usually like and said this was necessary to correct the previous layers but I'm trying to work out if this was a tale to win my repeat business or if the previous layers were just a different technique to help with my fine hair?

I am, probably incorrectly assuming that the big brand hairdressers have regular training and so would be up to date with the latest techniques whereas the local salon may not?

Thanks for any advice, I'm just weighing up who to go with in the future!

Hairdressers have said similar to me before.
I think it's different layering techniques.

I like mine cut the way that a particular chain do it (whichever stylist) and it's never quite right at a more local salon. I don't think one is necessarily better than the other more just a preference.
