Last week I went into Selfridges, I was looking at the Kiehl’s counter at the face product. A guy ask if I needed any help, I said yes I was looking for product for face to help with whiteheads and reducing them told him I have sensitive skin.
He asked could he test my skin, I said sure.
He wiped it with astringent, and tested my hydration level with a pen thing. It came out at 37%.
He then put some daily reviving concentrate(a lightweight facial oil)
Then tested my face again, hydrated level was 57%.

Asking him what he thought I needed the most and he recommended
The Blue Astringent
Pineapple/papaya facial scrub twice weekly
Daily reviving concentrate oil
£92 in total

Since using them, my skin as gone horrible, like hard crusty in patches
And dry with skin peeling. I’m sure it’s the Astringent

I’m I in my rights to take them back?

You told him you have sensitive skin and he used 1. an astringent and 2. a facial scrub(?!) containing papaya, i.e. fruit acids. I'm no beautician or dermatologist but three new products all at once, two of them I wouldn't think we're suitable at all, seems like overload. I'd contact their customer services and see what they have to say. If you go back to the store, ask to speak to the manager.

And yes - I would be looking for a refund.

I wouldn’t use an astringent and fruit acid daily. Way too harsh. Perhaps drop them down to one to two days a week? But yes, poor advice from the counter guy.

Email Selfridges customer service first asking for a refund. Print off their reply and take it to the counter or a till in store. Explain what has happened and show them the email from customer services.

Most big companies like Kiehls (owned by L’Oréal) will refund customers if you have a problem with their products. Just explain you have had a reaction to their products and they should be fine.
