My bob is pisssing m eoff. If I put my hair in bunches and chopped into it, would that give me layers?

This is bunches on top brushed the wrong way, right? Like the MN haircut? Not just 'I did bunches and cut them'?

hair was already in a parting, I'm trying for a heavier swept across look rather than straight fringe

no, just grabbed from sides. I think you woudl get a different shape if you tipped had upside down, longer underneath.

I am tempted, but I do cut my own (fairly long) hair sometimes, have slight hairdresser phobia after being scalded whilst pg with my ds.
