I sized down (I'm between sizes anyway) - they seem quite roomy.

I really like the first ones but I would be worried they wouldn't fit my fat cankles, do you think they are at all stretchy round the cuff?

They will absolutely fit, they have a split at the top, which comes down 2 inches so that they 'slouch' slightly, and the strap is adjustable.

And no-one has fatter legs than me

Am I being thick but if I am a size 6, a girls size 6 is the same! Loving some of the brown leather biker boots (go up to size 7), about £40 ish, way cheaper than adults leather ones surely!
