Life can be busy, and finding the time to prepare something both healthy and tasty can feel like a challenge – especially when you’ve got little (or not-so-little!) ones to feed as well.

Another vote for wraps, with sliced chicken breast, barbecue sauce and mini tomatoes and cheese. A minute in the airfryer and we have them hot in the winter.

A good breakfast for us. Ninja shove whatever going the fridge or tins (Tom's, chicken, sweetcorn, beef, tuna - anything) roughly cut up with quickly forked through eggs poured over. Cook until eggs set. Makes for a quick frittata. If you make too much, cold for lunch. Yum.

I have a raclette, virtually no prep (I will boil some new potatoes) just put meat and veg out with some cheese and leave it up to everyone to cook their own.

My sister-in-law's recipe:

Any pasta
Any large tin of sardines in oil, or anchovies in oil
.. and some grated carrot & bell peppers (if you have them).
Cook pasta, add sardines and grated vegies.
Serve
Shake Parmesan over the top
Eat

Home made pizzas are a great way to get the veg in. From the tomato sauce to the onions, peppers, mushrooms, spinach etc. to top them.

A real crowd pleaser in my house is chicken and chorizo ragu! It’s a bbc good food recipe I discovered whilst scrolling and it’s so versatile - can add extra veggies - tonight I added chopped baby sweetcorn’s - and serve with chips/pasta/rice/flatbreads or as a topping for a jacket potato. And the best thing is that I make enough for leftover lunches the next day 😋

Mix chopped tomatoes and red onion, cannellini beans, feta and black olives. Top with mixed dried garlic and herbs and olive oil. Bake for half an hour or so. Delicious.

What temperature do you bake it on?

  1. You just have to make sure the onions are sliced small enough that they cook through fully.
