Cooking / recipe resources for ND young adults

DD is 18 and has many food sensitivities and struggles to get a balance in her food - particularly vegetables. She’d live on rice and noodles left to her own devices. I’m looking for some resources for her to help as she becomes more independent. She is autistic and dyslexic so cook books with complex processes or ingredients might not be the most helpful. She has some basic skills (eggs in multiple forms, pasta, sausages) and is getting used to the air fryer. Any recommendations?

We made our own recipe book, its just a note book that has recipes that dd likes but written in a logical step by step approach.

ChatGPT will create a really good set of recipes for you with instructions and shopping lists if you play about with it for a bit.

We also made our own recipe book using a notebook with DD2.
