Quick gatteaux a la microwave Grin

6 oz sugar
6 oz Self Raising Flour
6 oz Butter
Few drops vanilla essence

1 large soufle dish
Grease proof paper

OK grease the sides of the dish and bottom. put a circle of greaseproof paper at the bottom, put in some sugar and turn on its edges to coat the buttered sides.

Chuck everything else in a bowl. Literally no blending or fancy stuff just mix away! Pour it in the soufle dish and pop in microwave for 9 mins. When done leave to settle for a min then turn out on a rack so you have the smooth bottom now a nice decorating top Grin Cut in half or I do it so I have 3 segments and put cream and jam separate or you can put fruit and cream for a sloppy gatteaux/pudding! :)

sorry to all those budding micro enthusiasts but plan b WITH eggs works better Grin

Its an easy one and lasts about 2 days before you need to eat it with custard (waste not want not :))

best (easy) cake receipe,

measured in (individual not multi pack) yoghurt pots although children's glasses or cups will do... its a very forgiving receipe, Grin

3 pots SR flour
2 pots sugar
1 pot oil
1 mashed banana,
3 eggs

squish banana, chuck in the rest, quick stir, cook at Gas 4, 1 hr 15 mins.

will go in loaf tin, sandwich tin, muffin cases (cook for less time)

can add any extras you want, i like cocoa and chunks of chocolate Blush, but have done coffee, coconut, lemon, etc etc.

DS loves doing this, (i made a symbol (board maker) version of the receipe so he could follow it himself).

zzzzz You can make one without eggs if you just buy a mix from Tesco that says "just add water" Grin at least that is what DS would say.

I am going to remember the yoghurt for softness.

i'm upset now.....thought i was going to have some cake, (without eggs) got severe egg allergy, i only have to crack an egg and i swell up like an her in charlie and chocolate factory lol, allso got a dairy allergy and in need of something sweet.

Egg replacer works with most recipes.

I think that when you have DCs on restrictive diets you get inventive. It's amazing what concoctions you can come up with Grin

Agree it's all science. It's also by sight as well. Before GFCF I could tell by looking if a cake mixture was going to be OK. I've had to re-adjust now I use GF mixed flours.

after you have greased the sides with butter you throw in some sugar and roll the dish on its edge so it sticks to the sides. Gives a crunchy gatteaux crispness :)
The ingredients are similar to a oven bake madeira which I use to make Tunis cake for xmas as its damned expensive to buy in the shops!

I wonder if it would work gf (might need some tinkering)

my lovely friend came up in the end, (as I ended up not being able to do much - sudden sore wound after being fine for the lat 3 weeks Confused) and brought some flour, so we did dh a sponge, with chocolate chunks in (which made it fall apart on cutting/serving Grin), and bunged some strawberries on the top.

will have to bookmark these threads for future reference, though, as you have all been brilliant at coming up with solutions!
