SW batch cooking and meal prep inspiration thread

I love a bit of meal prep- saves time, saves money, and keeps me on track because all the thinking is done.
Anyone else? Thought I’d start a thread where we could share ideas of what preps well, how long it keeps etc.

Today I prepped:
overnight protein museli -
40g museli - hexB,
scoop protein powered 4.5syns
tbsp chia- 1.5 syns
100ml milk from allowance.
tbsp ff Greek yogurt.
(my daily breakfast, I add fruit to this on the day, make 3 days worth at a time)

quinoa salad- with peppers, sliced mange tout, spring onion, lime, chilli, soy and ginger. - not made before, hoping it will keep 3 days and will add cooked chicken and fresh salad to it

veg soup- freeze in pots and defrost when needed

jelly/trifle pots- make a sachet of orange jelly with ff yog , add a Jaffa cake, set, then make 2nd sachet with water- make little layered trifles, serve with fruit. Makes 3 pots, 3.5 syns each. These would keep 3 days but the kids have already expressed an interest!

also roasted a small pork loin joint to make shredded pork and hoisin wraps tomorrow for dinner (dc and dh will have proper wraps, I will have v thin omelette wraps)

I'm new to this board and hoping to bump your ideas post @thenewaveragebear1983 because it's such a good one!

I do like batch cooking soups for the freezer. Current obsession is sweet potato, red pepper and low fat coconut milk with some kind of pulse in (butter beans, chickpeas or red lentils are my go to).

Lasagne is also something I like to batch cook and freeze in portions. Sometimes I use normal pasta lasagne sheets, sometimes I do courgette with a veg peeler instead for the sheets. I also really like having brown lentils instead of mince sometimes. My white sauce is usually cornflour and milk roux (add nutmeg and bay if you have it as well as S&P) with grated cheese and an option on extra light philly in it too. My other top tip for making a lasagne or bolognese less like hard work is to have a "soffrito" mix in the freezer ready to go - it's just chopped carrots, onions and celery, and can be found in Tesco or M&S, and honestly just being able to chuck some of that in a frying pan without washing, chopping and peeling is well worth it IMO.

I might also do meatballs or burgers for the freezer. Not meal prep per se, but very easy to grab out of the freezer and into the air fryer to contribute towards a meal. Adding a jar of passata with garlic and herbs and a sprinkle of cheese makes for a quick meal.
