Quick, simple dinners

Hi everyone!

Started slimming world last Friday and lost 5lb!! Totally over the moon!

My DS is 5 months old and a limpit. I can't put him down or he's hysterical and it takes hours to calm him down. I've tried everything. Even once asleep he wakes instantly the moment I put him in his crib.

Because of this, cooking from scratch is quite difficult. I've been having stir fry, spaghetti Bolognese (batch cooked the bolognase at the weekend) and scrambled egg on toast.

I'm all out of ideas. Please can anyone suggest very very quick and easy meals that I can make when DH gets home and I have a few mins in-between sterilising, feeding the baby, tidying up, hoovering etc

Ooooo they look amazing! Especially the hunters chicken! Thank you!! Will give them all a go!

I have a slow cooker. Didn't even think to pull it out the back of the cupboard so will do that tomorrow and dust it off! Ha!

No meal ideas and you've probably thought of this already, but do you have a baby sling? You could look up 'sling libraries' and 'babywearing' near you. At least you'd have the use of both hands then

Check out the two chubby cubs website/Facebook page. They have some fantastic recipes and if you've the staples in then most are very quick and easy.

Low fat sausages mash and beans or veg (Syn if you use gravy)
Baked chicken legs with Syn free seasoning- fajita is my fave- with quick cook rice and a steam bag or veg
Quorn pieces, stir fry and soy sauce
Tofu and kale scramble
Black bean or kidney bean parties made with mash and spring onion
Homemade fish cakes (Syn if you bread crumb them)
Baked burger/meatloaf/lamb kebabs
Chicken and veg scewers with cous cous or quinoa tabbouleh
Baked potato with beans and cheese or Tuna sweet corn (Syns for light mayo)
Chicken wrapped in bacon (cut off fat) with healthy A of mozzarella tucked in baked with spinach and cherry tomatoes, eat with mash, new potatoes or pasta (Syn any butter)
Baked eggs with cheese spinach and tomatoes

Sling is a great suggestion. Will give it a go. A bit nervous cooking just in case - with him being closer to the stove etc.

Daff - yuummm I'm starving now! Ha! Thank you for your suggestions!

I made a slow cooker stew tonight which will be ready for lunch tomorrow! Wehey! Glad the season is changing that I'm starting to crave stews and things

No worries 😀 I have done a few diets, but found my best has been simple calorie counting/ not snacking. Stress helped too 😬

If I'm literally stuck for ideas and about to gorge on kids tea, I'll do a pan of rice cooked in stock, throw in whatever veg I can find then season with soy sauce. Not the most exciting meal but filling, syn free & perfectly acceptable (much tastier if have time & inclination to turn it into egg fried rice if you spray a wok, fry some garlic and a whisked egg then finally stir in rice before serving.
