Your easiest SW meals please!
legolammb · 13/02/2017 19:42
I'm really enjoying SW, BUT, gosh there's a lot of cooking from scratch. Tonight I've got a migraine and feel rubbish but have forced myself to cook - a simplified pizza topped chicken.
Can anyone suggest really quick, easy meals for nights when you're feeling rubbish? I have a tiny freezer so can't really do big batches of cooking unfortunately

Omelette with whatever you have in the fridge
5% fat mince beef with onions and tinned carrots with stock with a jacket potato or could have it with smash
Jacket potato with baked beans and salad (I buy the ready prepared bags because I'm lazy and won't eat salad otherwise) or skip the salad and have fruit afterwards
Stir fried veggies with rice
Quorn meetballs (I eat quite happily on their own with Parmesan HEXA followed by fruit)
Ready prepared salad with any cold meat I have in or cold boiled eggs or cheese
Poached eggs on toast (could add spinach or I just have fruit after)

I had a prawn stir fry with noodles tonight which was super quick and easy.
Jacket potatoes with cheese and beans is another favourite for nights when I can't be bothered to cook.

Put Frozen Mediterranean veg on a baking tray with a chopped chicken breast. Sprinkle on salt, pepper, Cajun/peri peri/paprika, spray with fry light and roast for 10 minutes. Add half a tube of tomato purée and a cup of water, stir and return to oven for 10 mins or until chicken is cooked.
Remove tray, pour in 50g of dried cous cous and 60ml of water, stir, cover in clingfilm and leave for 8 mins.
Serve with hot sauce, natural yoghurt and chopped spring onions

I try to cook a day ahead so if I'm feeling crap or busy I have something ready. Even if you don't have much room for storage, a double batch of mince and onions is great as you can make it into shepherd's pie, chilli, tacos or bolognese with minimal work. I'm also a fan of stir fry veg, prawns and noodles.

Lovely, thanks for the ideas. I do love jacket, beans and cheese as my go-to quick meal but felt like I'd exhausted it!
muminthecity and Queen - I need to remember prawns for stir fry - would be much quicker than chopping chicken
Chelsea - really like the one pan idea
Going to keep some Quorn meatballs in the freezer as well

Three Heck chicken italia sausages (1.5 syns), mash with quark and seasoning, beans and salad.
LavenderRains · 13/02/2017 22:41
Vegetable Fritata
chuck mushrooms, tomatoes, courgette and peppers in a pan with fry light. Beat 3 eggs and season. Add to pan and cook. I put the pan under the grill to finish off. Add grated cheese (hexA) if required. Eat hot or cold.

Boil up pasta, cook some bacon and mushrooms, add Philadelphia cheese or low low cheese and melt together then add the pasta and mix together.

I always keep the chicken you can cook from frozen in the freezer & microwave long grain frozen rice - my go to are these mixed with frozen veg some soy sauce & topped with a poached egg
SittinginaSleazySnackBar · 14/02/2017 14:48
I don't know what they are like but I noticed slimming world meals in Iceland yesterday.
Might be okay for the times when cooking is too much!
pandorawithtreaclecolouredhair · 14/02/2017 15:19
All-in-one stir-fry of any veg with Quorn pieces or chopped chicken thighs, or stir fry the veg separately and top with fried salmon or tuna.
I add Chinese 5 Spice and soy sauce to the veg: can be a nice SP meal, or you could also add straight-to wok noodles (Amoy rice noodles are free).
Blankiefan · 14/02/2017 19:18
I've tried one of the asda slimzone meals - the tikka masala. It was fine - bit amazing but £2.50 and a big portion, pretty standard ready meal stuff. And free.
I wouldn't give the asda slimzone sausages freezer room tho -
Worst sausage I've ever tasted.
Frouby · 14/02/2017 19:22
Tray of prepared roasting veg you get from supermarkets. Roast as per instructions. Cook some pasta. 5 mins before veg cooked squirt tomato puree (about a tablespoon) on and if you have your Hea left, half a ball of low fat mozzarella and return to oven until cheese melted. Drain pasta, mix veg through pasta including all juices.
Salt and pepper and a blob of salad and you are good to go!
Juveniledelinquent · 14/02/2017 19:29
Skinless boneless chicken thighs, done in the oven for 40 minutes with an onion, garlic, tomatoes, peppers and mushrooms.
hotcrossbun99 · 14/02/2017 19:30
Jacket sweet potato with feta cheese. Or prawn stir fry with frozen prawns, noodles and any veg plus a bit of stir fry sauce- takes hardly any time or effort.
Pasta and quark with chicken or tuna and sweet corn.
Egg and chips.
legolammb · 14/02/2017 22:32
Blankie - I heard terrible things about the asda sausages at my meeting so will definitely avoid!
Thanks all, lots of really helpful ideas there. Especially like the idea of cook from frozen chicken - remembering to defrost stuff, or defrosting it and not feeling like cooking it is always an issue for me
LavenderRains · 14/02/2017 22:35
I tried a couple of sw meals when I first started. They were both disgusting. One really spicy and the other just tasted of vinegar. Don't waste your money. Plenty of great tips here.
