Hi, I was at the gym this week so curiously got on their scales which showed spot on 12stone , however at my weigh in today on the digital scale I was 11.3 . I appreciate that our weight goes up & down but which is accurate ?

Both or neither. Weight is massively variable due to fluctuations in hydration, hormones, food in the digestive system, recent exertion etc and therefore isn't actually a particularly useful measure. Scales are also generally uncalibrated or slightly inaccurate. If you want to measure weight loss pick one set of scales and use them to track progress, but if you're looking to lose weight for health track gym progress or use a tape measure - they're much more reliable and less prone to fluctuations.
