Making dinner for a SWing friend

On Friday I'm making dinner for a friend who is SWing at the moment. I really want to be supportive and make something that fits in with her diet but I haven't got the first clue!
Can anyone recommend something lovely or give me any recipes?
The only complicating factor is that I'm cooking it at her house so easily transported or pre-prepped would be best.

How about a chicken and bacon casserole? Completely syn free. You can cook it at yours and then just warm up at hers. If thst takes your fancy, will give you the instructions.

Or a beef stroganoff. Again syn free and you can prep at yours and just use 1 pan at hers.

Or a pasta bake. Prep at yours and bung in her oven for half an hour.

Chicken and bacon casserole sounds fantastic if you don't mind sharing?
Can I be really cheeky and ask if there is such a thing as a SW pudding as well?

If you go to the website there are loads of recipes you can look at! And yes, lots of SW desserts. Nom Nom :-)

I am not a desert person but will go online and have a look for you. What do you normally like for pudding. With the casserole being syn free, you will have a few syns to play with.

Anyhow, the recipe is :

Chicken thighs (I usually do 2 per person)
Bacon - cut into thin strips
Onions - roughly chopped
Carrots - chopped
Potatoes - cubed
Bay leaves
Chicken stock cubes
Seasoning

°Fry off the chicken thighs until browning on both sides. Remove and set aside.
°Fry the onions. The bits that the chicken leaves behind make them yummy (if you have frylight or similar, great. If not just use a small drizzle of oil.
°When the onions have browned add the bacon and fry until cooked.
°Pop the chicken back into the pan
°Add the carrots and potatoes
°Make up the chicken stock - I use 2 cubes - and add water until it just covers the ingredients.
°Add a couple of bay leaves and seasoning.
°Simmer for 45 mins.

And that, literally, is that. It can be made the day before and just reheated if necessary.

If it is still a bit watery when cooked, just whack up the heat for a few minutes.
