Grunting baby

My baby boy is just over five months. He was born 3 weeks early and low birth weight 4lb 7). At night, he usually starts with 2-4 hours of solid sleep (more often it's 2/3 than 4) then wakes up more and more frequently until it's every 30-45 minutes until we get up around 6/7am. He goes to bed around 7pm.

The sole reason he wakes up is his crazy night grunting. He'll be grunting and writhing about, legs kicking in the air, arms flailing. It wakes me up every time, and eventually he will wake up upset. It seems like he's trying to pass wind (sometimes he does, sometimes not). He poos regularly without an issue.

When he was maybe 2-4 months he had really bad colic and reflux. He'd cried for up to five hours a day (luckily that has passed!!) He had a few medicines for reflux but it doesn't seem bad now either.

He's EBF and I wind him obsessively after every feed. I've tried gripe water, infacol, colic drops, colief....no success. He's absolutely fine during the day, no grunting, no writhing, no wind issues. I've tried tilting his mattress (he's in a Next 2 Me cot). Usually from around 2/3am he'll end up in bed with me as it's easier for me to settle him instead of reaching over constantly.

I've cut dairy out of my diet for around 5 weeks now and no improvement.

What else can I try?!? Doctors told me he'd grow out of this but he's nearly 6 months. The longest he's ever slept is 4 hours and that's very rare. Any suggestions??
