Electronic handbrake issue...

The car I learnt to drive in had a normal lever handbrake.
My instructor taught me, when waiting at junctions or doing a hill start, to find the biting point and set the revs, then when ready to pull off, just release the handbrake. I found this so easy, never had a problem.

The car I have now has an electronic handbrake. I obviously can't do the method I was taught because if I find the bite and set the revs, than handbrake will automatically release and the car will start moving.

What the hell do I do? I don't know how to drive my car. I passed my test with no problem... but now I feel like I have no clue how to drive.
I'm not very experienced (obviously) so I'm hoping one of you will impart some wisdom... please?

Oh my god... how did I not think of that?

Does the car not mind being 'revved' before the bite is set then?

My instructor taught me to move off on clutch first (which I've since read is not the correct way... probably why I've stalled this car so much 🤦‍♀️)
I've never been told to apply gas before finding bite..

Provided that you are planning correctly and only get ready when you think you can pull off it should be fine.
