Help! My skirlie is a disaster

I've never made skirlie before but my family have been whipping it up for generations.

I bought pin head oats and followed the recipe but the oats won't soften, they're still crunchy and the onions have burned.

I didn't use beef dripping as I'm feeding vegetarians, I used butter and olive oil.

Whole lot now going in the bin. Any foolproof tips?

I think vegetarian suet would be your best bet. Atora - beside the beef suet in supermarkets

I've never made it only eaten it when cooked the traditional way. I'm inclined to think the olive oil was the problem as it's not been absorbed by the oats.

If pure butter doesn't work I'm not sure what the answer would be to make it vege-friendly.

Atora! I didn't know that was veggie. I'm going to try again, think I might get medium oatmeal this time as the pin head are just so hard.

I know this is very non traditional but rolled oats will soften nicely and def use the veggie Atora

Just use normal oatmeal, veggie suet, onions and cook in microwave then season. Not traditional way to cook but my preferred option now. Love skirlie!
