Hello does anyone have a recipe for honeymoon slice, it's a Scottish thing seemingly further north than where I live. I can't for the life of me find one online that doesn't involve cups etc
TIA

OP posts:

I've never heard of it but I just Googled honeymoon slice and the very first recipe doesn't use cups.

That's the recipe I found too.

HufflepuffRavenclaw · 18/02/2023 08:58

Never heard of it either! It looks like caramel shortcake.

HoldingTheDoor · 18/02/2023 08:58

Ok, just looked at the recipe again and it seems to use cups for the cereal but grams and oz for the rest. That's so weird.

HoldingTheDoor · 18/02/2023 09:03

According to a baking converter 1 cup is about 25g of Rice Krispies.

Not helpful in a rush, but you can buy "cups" measures in the UK. I have a set which I picked up in a charity shop and they're really useful.

Scotland never heard if it. Just looks like millionaires shortbread with rice Crispin base instead of digestive.

Why can’t you use cups? It’s a volume measurement, and is 237ml for one cup. I found this by googling. So it’s about a normal mug. Or use a measuring jug etc.

My mum is a traybake master (SW Scotland/Ulster). I vaguely remember her making a honeymoon slice but don’t remember it being like that. Frustratingly she always works in vague measurements too, but I’ve messaged her for her recipe and I’ll post it if it adds anything enlightening to the conversation. X

Is that not the thing that's like sweet mincemeat with a pastry bottom, topped with thick icing sugar? Haven't thought about those in years!

horseymum · 20/02/2023 11:44

Free Church of Scotland recipe book has Bridal Slice- pastry with jam layer, then a fruit and biscuit crumb mix, then marzipan and glace icing. Lots of tray bakes in that book!

That's a fruit slice here.

Fractiontoomuchfennel · 20/02/2023 13:38

I was getting mixed up with bridal slice too!
Here’s the recipe from an old cook book of my mums.
”line a Swiss roll tin with foil and cover the bottom with 6oz of melted chocolate.
Mix together 4oz coconut, 2oz icing sugar and 1 small tin condensed milk. Spread this mixture of over the chocolate.
Topping
Boil together 4oz butter, 2 tbs golden syrup and 1 small tin condensed milk until soft ball forms when tested in water. Use this to cover coconut mixture. Sprinkle with rice crispies then cover with 6oz melted chocolate”

Sorry should have said the recipe I’ve posted is honeymoon slice.

KirstenBlest · 20/02/2023 14:36

Thanks @Fractiontoomuchfennel . Got any more recipes?

She has lots of old cookbooks - many hand written notebooks from her granny. When I was growing up she often had to make traybakes for WRI competitions or bowling club teas etc so has a vast repertoire. Next time I’m at home I’ll take a note if some of the nicest ones and start my own thread.

KirstenBlest · 20/02/2023 18:50

@Fractiontoomuchfennel , I think you could start your own business, or at least a blog. The recipe you posted sounds sensational.

Cazziebo · 20/02/2023 19:02

My granny would always complain that Paradise Slice was actually Honeymoon Slice. Pastry bottom, jam, mincemeat (I think with cherries) then a frangipani top with sprinkled sugar.

We call that a fly cemetery where I'm from 🤢🤮

OP you can buy cups in the utensils section in the supermarket.

That's like a cross between a bounty and a lion bar! I think it would be popular in my house.
