I know everyone has their own version...my mum used to use mince.

I was at a posh do and they served stovies at 1am to help soak up the drink and it was delicious. It was like shredded roast meat and baked potato but with the rich gravy flavour all the way through sliced into big squares like a lasagne that held together.

So - anyone know how to do this dish?

Was it like slices of potato? Could you do like a dauphinous with shredded meat mixed in and replace the creamy sauce with stock/ gravy. Roast in a dish covered until potatoes ate soft then take cover off and let it crisp a bit?

Lorne sausage, parsnips, carrots, onions, potatoes, stock. Simmer and add Worcester sauce is how we make it. It was originally made with mutton as it's pretty much peasent food.
It's bloody gorgeous and I've got some in the slow cooker for dinner tonight.

Thanks both. Yes it was sliced potato - and I think I'll do a mash up (see what I did there) of both your ideas. Sliced potato, carrot and onion-shredded meat covered in the gravy and bottom of the stove for a couple of hours.. fingers crossed 🙂

Yes, I forgot onions :) Carrots and parsnips in stovies is an abomination though! :o :o

As kids we either had white stovies (no meat) or sausage or corned beef when we were well off enough to afford meat. I still make white stovies sometimes as a side dish. I tend to do Lorne sausage too when the mood arises. DS1 doesn't eat potatoes though so we tend to have them when he isn't around.

Ohhh I went to a wedding in Scotland where they served stovies at about 10pm when everyone was pissed. Seriously - food of the gods! Placemarking for recipes Smile

I have had roast beef stovies at a wedding they are very nice , however mine is square sausage onions potato oxo cube splash of wocstershire (sp) sauce S&P I sometimes use bisto granules if i have no oxo. I love stovies my mums are better than mine though not sure why

Oh sorry you just layer all your(posh ingredients add stock and bung it in the oven but thatimo is not stovies

I chop onions quite big and lightly fry those plus chopped up lorne sausage (other sausages are available...) and then I add my chopped potato. I chop some bits of potato quite small, some medium and some a bit larger as that way you get the right consistency of mush and still some chunks of defined potato. I then add beef stock just to the point of the top layer of tatties but not covering them and add seasoning and leave to simmer with a few stirs until the correct consistency is reached and all the potato is cooked through. If making it with corned beef, I make white stovies (as above but without the sausage) and when they are cooked you stir through a tin of chopped up corned beef. You only need to melt it through the hot stovies. It's horrible if it's cooked for long. Serve with a swirl of HP and some buttered toast :)

Fry onions until almost brown in leftover fat from the Sunday roast (this is essential as it gives an amazing flavour!), the add layers of sliced potate and link sausages along with a bit of beef stock. Stir a couple of times and and add a bit more stock as required. Gorgeous.

My dad made the best stovies
Corned beef, onions, potatoes, and bisto I think (although he used coffee once by mistake)
There might have been a few other ingredients but I've never made them I used to love the burned onions that stuck to the bottom of the pan.
Now I've seen this post I'm going to make it my mission to make my own. It's been over 10 years since I've had them.

We like it with corned beef, yummmmm. But the lorne sausage sounds good and I think we're going to try that - I could honestly eat a plateful now!

Surely it's Corned Beef Hash rather than Stovies if you don't use sausages or leftover meat?

dotdot To me corned beef hash is more a fried dish rather than a dish cooked in stock so I'd say it wasn't the same.

Mmmm, stovies. Granny made them with leftover roast beef, mashed tatties and gravy.

My favourite Scottish food is skirlie, though.
