Can I please ask... Is it fair to care for my 9,7 and once a week 19 year old disabled son for the entire 91/2 week school holidays with no help or "time off"?

Fair? Maybe not, but life isn’t always fair, sadly. Yes the father should be helping too but it sounds like he works a lot? You chose three children, and if he is working then it falls to you. There may be support out there, speak to local charities, social services, etc. Do you have friends and family IRL who can rally round?

Why are women constantly making excuses for shit dads?

Unless there’s a real reason like their dad is dead or abusive so isn’t in the picture why is it just something that women have to put up with?

it takes a man and a woman to make a baby. That is two parents who have the responsibility of raising and caring for the children.

Whether you’re with the father or separated, tell him to book a week or two off work and he can have his children. Try and book some holiday camps if possible too.

Have you contacted Scope or Gingerbread to see what help is available? Any holiday clubs? Childcare? Relatives?

There's not enough information to know if the man is 'shit'. OP hasn't said if she's employed.
