Redecorate a room in your house?
Do a cooking course?
Sew children's dressing up clothes?

hmm, doing a creative course of some sort is a good idea i think. because i do need the input of other people to keep memotivated.
cooking would be useless activity as no one evereatsanything i make, unless it is one of the four staples of their diet. ie boring..

Try quilting.
Start off with easy designs (or smaller lap sizes) to learn the techniques or if you don't have much time, then build up to more complex (and larger bed size) designs, if you want. They are very good at being put down and waiting for you to return and it is very east to pick up where you left off. Hand or machine (or tie) for the quilting part, again you can choose based on the amount of time you want to - or have to put into it.

A finished project gives great satisfaction of producing a very useful object that can last (hopefully). And there is a palatable sense of care and love when one curls up with a handmade quilt.

Some insist on perfection - for show / heirloom quality, but I usually make utility quilts to be of everyday use: I find not getting my panties in a twist over the flaws helps me relax that it really isn't a perfect world- a kind of therapy for perfectionist tendencies.

There are plenty of good books that have complete instructions. Tons of websites, too.

Gardening did wonders for me. Being outside in the fresh air, planting, tending and seeing the end result. I am really into it now. Plus the gardening thread on here is great!

Sewing is good. I got myself a cheap sewing machine and a simple pattern and i made myself a corset! It took a while (with a new born baby!) but i did it. It was done bit by bit but it was worth it.
