Help redesign my kitchen

We have had a new kitchen installed in a very small cottage (open plan living area)
We ordered the wrong size wall units which overpower the space. Also the units are too low - making the work surface unusable and unsafe over the cooker. Unfortunately we weren't around when the fitter installed- he just worked off the plan with the units we ordered Confused
We are going to have to get the kitchen reconfigured and the cost is spiralling.
Do you think we could remove the double wall cupboard on the left and put up some nice shelving to keep costs down. Would this work - I've done a really bad photo shop to try and show what I mean. Space is very limited. All your great ideas welcome.

I'm not sure if I can give advice on what will or will not work for you, but if you have a plan of your kitchen or you can draw one, use a 3d kitchen planner to see how you can rearrange the space. Add the furniture that looks like what you currently have or the one you'd like to have and see how it all goes together.

yes, removing the wall units and putting in open shelving would probably work out fine.

That would work OP.
However, I would be furious with the fitter! I understand you had ordered the wrong size, but surely any decent tradesman would have known instantly and given you the heads up before actually fitting them.

How much too low are the cupboards, standard distance is 500mm. If you've not done anything yet, Id suggest checking if you can remove the pelmet at the top of the wall cupboard, and get them moved up, so they are tight under the beams. I would also question the fitting company, as should have know that this was too low, and flagged it with you before they put them up. The layout that they were working to should have also included that information as well.
