Thinking about removing second bathroom

Hi,
I've bought this old Victorian garden flat and we are going through a full renovation.
The family bathroom has been recently redone. It's a nice relatively big bathroom with walk in shower and a free standing bath.
Now, looking at the floor plan, the architect suggested we knock down the guest bathroom to increase the size of the kitchen (it is very small indeed) and put a half bathroom under the stairs (neighbourhood's flat).
We've been living in the property for one year now and I can't recall needing to use both showers at the same time (and I would suspect it would be hard given poor water flow and boiler capacity). I must say the idea is tempting, specially because we are on ground floor and the flat is not too big. But not sure if this is a good solution.
I live with my partner and DC is home only every other week (50/50 custody with ex).

As long as you will always have two toilets, fine. DH grew up in a home with 6 people and only one bathroom. They had no privacy, as someone was always barging in to poop while you were in the shower (ugh, revolting). If you had more than one child, I would also advise against only one shower but this seems manageable.

Officially 2, but I converted the front room into the master bedroom as DC wanted their own room. So, 3 now...
