I moved into a 60s bungalow with a finished attic convertion. Upstairs they put in a large set of windows with a stunning view, a small store room and toilet. Other than that its one huge space (see plan - the room has sloping sides but is still a good size). The windows arent shown but the large floor length windows at the top opposite the stair, and another standard window at right gabel end.

Here's why I'm considering changing the layout. (1) The house is not well balanced, the kitchen and family room (which is like a sun room with windows on each wall) are far from the living room. Think of the faff getting a cuppa when you're upstairs. (2) There's no connection to the back garden, which is lovely and great views (at the top of these drawings). (3) while the room upstairs has a great view from the area by the stairs, the main seating area is largely windowless. It also feels like a lot of wasted space.

I have considered knocking through from the kitchen to the small bedroom and replacing the existing bedroom window with double doors to back garden. This would be a bit of a hassle because this wall has a closed off fireplace/chimney. This would make an open space living area and get more light into the kitchen. Could possibly then put two bedrooms upstairs making it a four bedroom and make the upstairs toilet into a full bathroom.

I'm just not sure if its worth it. Some families may really enjoy having such a large space upstairs but its me and my dog and I have visitors come stay and so wouldnt mind a smaller overall living space for a house that was more livable.

Any ideas?

Employ an architect, it’s their job to these kinds of ideas, plus you’re talking potentially major changes here which could have structural, planning or fire regulation implications so they can advise you regarding those. Are getting trades people in or doing the work yourself? Regardless, working of a set of plans avoids any confusion down the line.
