Help me out of my induction-hob-research rabbit hole!

We need to make the switch from LPG to electric (long and complicated reasons involving changes to the water table and flooding around the gas tank). We’re finally sorted on the heat pump side of things and I’m currently researching induction hobs to replace our gas hob. I love cooking and cook a lot, often several dishes at once, so want something decent. After many hours of perusing appliance websites, I think I know what I’m looking for and have narrowed it down to a couple of models, but my head feels ready to explode and I would really appreciate a bit of advice and perspective.

I’m very tempted by the flex induction models. It seems like a brilliant idea (and will possibly become the norm in the future) but is it actually the worth the extra ££ or is it just a bit of a gimmick? Same question with Neff TwistPad magnetic dial. Will it make my life sufficiently easier on a daily basis to be worth the money?

I had a look at Which and am now even more confused. All their top recommendations are quite old models and they seem to prize heating evenly across the whole cooking surface above other features. How much of an issue is this with induction hobs? Which seems to be a bit obsessed with cooking pancakes evenly and although I can’t say I’m big on pancakes I do cook a lot of omelettes and frittatas, which I guess also need consistent heat across the base of the pan.

The two models I’m currently looking at are the Neff N90 T68FUV4L0 80cm (pricey, but has the magnetic knob thing) and the Bosch Series 6 PXV831HC1E 80cm (similar, but without the knob and a bit cheaper). Any thoughts much appreciated.
