Full splashbacks or upstands and painted walls

Need to decide if I want my new kitchen quartz worktops to have 10cm upstands and splash back only over the sink with painted walls or have all (2) walls with splash backs. Not that much wall to be painted as have lots of floor to ceiling units and a peninsula.
Thinking that the painted walls would add some interest and contrasting colour (maybe sage green) to my dove grey units and white marble effect quartz.

I've gone for porcelain mosaic tiles in my new kitchen, and they work pretty well and I know they can cope with scrubbing! I was originally going for a glass splashback behind the hob but the plasterer messed up and left me with a rough wall only suitable for tiles instead of reskimming everywhere. I was furious but timescale wouldn't permit it to be fixed before kitchen fitting and in retrospect I prefer the continuous tiles instead of the disconnect I'd otherwise have had at the hob. Lot more work though, good job I like tiling...

Still have no idea what to do with the huge, still-boxed splashback glass! Couldn't get a refund... I am using scrubbable kitchen paint, but on the non-worksurface walls which hopefully won't get splashed nearly as much.
