What do you mean the Solicitors exchanging contracts by email? I have never known this.

I've always done it by email. How else would you do it? Go in the office and literally swap packets of documents?

We had the documents sent by email but had to print out, sign/witness the hard copy, then send the hard copy back (email copy could be sent to progress things, but final exchange/completion couldn't be done before the hard copies had arrived).

Are you asking if it's possible to digitally sign the contract?

Digitally signing and exchange of contracts are not the same thing

Not sure exactly what you asking but last time we sold a property we never met our solicitor in person as they lived the other side of the country but we managed to Exchange contracts just fine via digitally signing paperwork.

Yes. There are secure PDFs and secure DX systems.

When the solicitor sends them to you to sign it should give you the option to download the digisign software.

I bought a new build and it was all done online.

It is the same for rentals as well. When we rented we signed the agreement online by digital signature and so did the landlords.

I am also an accountant and digital signatures are very common for tax statements and legal paperwork in business now.
